A chef’s life isn’t glamorous but I’m passionate about nourishing the mind, body, and wellbeing through food. I love so many things about my Lauren bag, especially how well thought out it is, and how it transforms from functional for work, to a tote for a more “chic” appearance! I use the two discreet, zippered inner pockets; they are great for security of personal items. I use the padded protective sleeve for my iPad or laptop. I also use the keychain clip a lot, and outer side pockets for my glasses, water bottle or whatever. It even has reflective panels for nighttime visibility!! Safety first!! Lastly, it’s lightweight! Chef’s knives are heavy!

Here’s what I carry in my Lauren: It has enough space for me to take a small knife roll with my necessary tools, as well as a couple of aprons, my chef’s coat, iPad, keyboard, phone, external charger, gloves, wallet, glasses, keys, and one of the most overlooked things — a first aid kit.

Also, I always carry extra pairs of socks. In this case, I discovered that MotoChic® had a sock line, I was beyond excited to find out that it was also a compression sock. On my list of one of the most important things I always tell a young chef is that they need to take care of their feet. We’re usually on our feet anywhere from 12-15 hours. Putting on a new pair of socks in between service is like having new feet. This is not only advice for chefs, but for anyone who works on their feet all day. xo Sui Lon

She graduated first in her class from New York Restaurant School (aka The Art Institute of New York City), and has worked for the renowned Montrachet and Petrossian restaurants. In the ’90s, her personal catering company served some of the greatest rock n’ roll bands of our time.
